We love this quinoa pilaf. It is hearty enough to have as a meal, delicious as a side, and best-yet: it is delicious cold. Let the leftovers abound! Beloved by kids and adults alike, it will become a staple in your repertoire. It's fast enough for a weekday night dinner, portable to bring as a side dish, packable for a picnic lunch.

The quinoa in this dish is high in protein, great for vegetarians or a "meatless Monday." Bust out the chicken stock if you'd like a richer version: all methods are delicious.
